Banana Peanut Butter Muffins

Ingredients:

1 C. flour

1 C. oats

1 tsp. baking powder

½ tsp. baking soda

½ tsp. salt

½ tsp. cinnamon

2 ripe bananas, pureed

2/3 C. sugar

¼ C. whole milk

¼ C. oil

1 extra large egg, beaten

1 tsp. vanilla

½ C. peanut butter chips

Directions:

• In a large bowl, combine the flour, oats, baking powder, baking soda, salt, and cinnamon.  

• In another bowl, mix the bananas, egg, sugar, milk, oil, and vanilla. 

• Pour into the wet mixture, add the peanut butter chips, and mix until slightly blended together

• Bake in muffin tins at 400 degrees for 15 minutes

• Serve warm 

Apple Pancakes

​

Ingredients:

1½ C. flour

1 ½ tsp. baking powder

½ C. sugar

½ tsp. salt

1 ½ tsp. cinnamon

1 extra large egg

1 C whole milk

2 – 3 peeled and grated apples

2 tsp. butter

Directions: 

• Optional: chopped nuts

• In a large bowl, mix the flour, baking powder, sugar, salt, and cinnamon.  After mixing, make a well in the center.

• Mix the egg and milk together  

• Pour into the well and blend together

• Add the apples and mix

• Heat the butter in a skillet.  Add pancake batter to hot skillet.  When it begins to bubble, flip, and cook through on the other side.  

• Serve warm with maple syrup and bacon
